Herbed Goat Cheese Balls

I don’t always have time for lunch and most days I need something portable, delicious, and something that’s not going to make me falls asleep right after I eat it. These herbed goat cheese balls fit the bill and I find myself making them for happy hour with friends too because you know, WINE. So do yourself a favor and get a 10oz goat cheese log in your fridge pronto so you can be prepared.  Mainly so you have something to go with your wine but we’ll keep telling ourselves it’s for lunch, mmm k? Champagne Cherry Gelatin Mold

I love old cookbooks and get many an inspiration from the recipes of the 50’s and 60’s.  The Joy of Cooking is my favorite and I especially love the “mold” section.  So many of the dishes crack me up. I can’t seriously believe someone would want to make and then actually eat molded cream fish.  I’m so glad that’s out of fashion.  Still, the recipes take me back to when I was little and in my grandma’s kitchen.  We almost always had Christmas dinner at her house and there was a beautiful fruit-filled gelatin mold on the table every year. New Year’s Eve Kir Royal

You better be making some Champagne cocktails this holiday season!  They require minimal effort, but the payoff is huge. The Kir Royal, a combination of Champagne and creme de cassis, is an excellent choice for your bar when entertaining during the holiday season.  I’m surprised the French even want to put anything in their Champagne, but apparently, cassis isn’t like, gasp, orange juice in your bubbly!  This cocktail makes for a pretty and different drink at your bar for New Year’s Eve. Amaretto Butterscotch Coffee Cocktail

Last week was all about Bourbon, and this week is all about Amaretto.  Amaretto is my favorite liqueur, especially when combined with coffee and butterscotch; the aroma is warm, sweet, and all holiday.  I first served this cocktail a few years ago at Christmas where my boozy drink loving sister and I enjoyed several.  It’s what sisters do, right? Amaretto Coffee Yule Log

This recipe came about a few weeks ago when I was making my mother-in-laws Jack Daniels chocolate cake.  I love boozy cakes and her recipe is delicious but the bourbon flavor is strong and while the alcohol mostly cooks out, I still worried my kids might have a hangover if they ate more than a bite.  Wanting to use my yule log pan and wanting to make a boozy cake, I substituted the bourbon with half Amaretto and half coffee and it worked like a charm. Rosemary Prosecco Mule for the Holidays

It’s Mule week here at The Happy Lush and this Rosemary Prosecco Mule is so good!  My previous post used Bourbon as the base where this recipe is all about the bubbly.  Prosecco makes a terrific bubbly to use in cocktails for several reasons: it’s reasonably priced, has a fruitier flavor which works well in cocktails, and the bubbles are festive. Festive Cranberry Bourbon Mule

I love the holidays!  It’s the time of year when we can eat, drink, and be merry and not worry about it.  I feel I am most creative this time of year too. Perhaps it’s because I don’t hold back worrying about what I eat or how much I should be drinking.  I’m all in right now and the recipe below certainly plays to that!  Tim and I were enjoying some drinks at the hotel bar last weekend while we were in Seattle; he ordered a blackberry Bourbon mule, and after I stole a few sips, I decided I needed to make a cranberry version. Tis the Season for Lambrusco

I love a great Lambrusco but whenever I mention the wine to folks, I always get a strange look.  If you were born pre-1970 you think I’m talking about the horrific Riunite wine that flooded the market in the 70’s and 80’s.  If you were born post-1970 you have no idea what I’m talking about.

The sweet Lambrusco that flooded the American market in the 1970’s and 80’s such as Riunite, has given the wine a less than stellar reputation.  The good news is, quality Lambrusco is making its way back on the shelves and I’m doing my part to share the message that this wine is legit. (more…)

Creamy and Delicious Wineshakes

The dessert opportunities during the holidays are fantastic, aren’t they? I mean, there’s fudge, fruit cake, and endless cookies. I was looking for something a little different, and I had to look no further than a wineshake!  Yes, I said a wineshake, a blend of ice cream and wine.  I’m a fan of wine slushies during the summer, but they don’t have the richness I was looking for in a wintertime dessert.  That’s when I thought to use ice cream and believe me, I’m glad I did!
