5 Tips for an Easy Summer Shrimp Boil

I love a good summer party, and last weekend we had our friends over to enjoy a Southern-style low country shrimp boil.  My husband is from Charlotte, North Carolina, and when I moved out there, I learned that low country boils are a way of life.  I missed them when we moved back out West, so we started having our own boil parties.  Having the pot out on the patio and having your friends participate in the creation of the meal makes your party a memorable experience.  Use shrimp, crab or lobster…whatever shellfish your tribe likes.  But make sure to follow my five “must-have” tips for any summer party to make it a real success. Lemon Pineapple Mint Wine Cooler

I’ve been working in my garden the last few days and have finally gotten around to planting my herbs.  I use herbs all over my garden because they are pretty indestructible and I don’t have to deadhead like most perennials or annuals, and unlike with vegetables, you can pick and use any time.  Plus, herbs are great for cocktails like this pineapple mint wine cooler. The Best Waffled Grilled Cheese

A few weeks ago I was making waffles for the kiddos and I was cursing my waffle iron.  It takes up storage space in my kitchen and I only use it for waffles.  But my kiddos LOVE waffles so I have to keep it.  If I have to keep it, I should use it more but that’s a lot of waffles.  Then it came to me, I can use my waffle iron like a panini press for grilled cheese sandwiches. Herbed Goat Cheese Balls

I don’t always have time for lunch and most days I need something portable, delicious, and something that’s not going to make me falls asleep right after I eat it. These herbed goat cheese balls fit the bill and I find myself making them for happy hour with friends too because you know, WINE. So do yourself a favor and get a 10oz goat cheese log in your fridge pronto so you can be prepared.  Mainly so you have something to go with your wine but we’ll keep telling ourselves it’s for lunch, mmm k? Creamy and Delicious Wineshakes

The dessert opportunities during the holidays are fantastic, aren’t they? I mean, there’s fudge, fruit cake, and endless cookies. I was looking for something a little different, and I had to look no further than a wineshake!  Yes, I said a wineshake, a blend of ice cream and wine.  I’m a fan of wine slushies during the summer, but they don’t have the richness I was looking for in a wintertime dessert.  That’s when I thought to use ice cream and believe me, I’m glad I did!
